A Kansas packer says the quality grades of cattle are increasing. “We
went from grading probably 45 percent to almost 85 percent Choice now,” said Chad
Barker, referring to the 12 years he has been in procurement for National Beef.
“It doesn’t change our focus, we still look for the high-Choice, Prime quality,
black-hided kind of cattle.”
Quality has improved quickly, according to Barker, but he says similar
improvement will happen over the next four to five years, which he says will get
National to almost 100 percent Choice.
