USDA’s 2021 annual dairy product report shows how production has shifted with more foodservice demand following the start of the pandemic.
Total cheese production totaled more than 13 billion pounds, up 3.5 percent from 2020 with Wisconsin production accounting for more than a quarter of it. Italian cheese and American cheese both made up slightly more than 40 percent of the production mix each.
Butter production totaled more than 2 billion pounds, down 3.5 percent from the prior year.
