It hasn’t been easy to increase the consumption of lamb at home. In fact, Sally Schole with the American Lamb board says it’s been an uphill battle. Susan Shultz, a lamb producer from Ohio and president of the American Sheep Industry Association says the lamb industry was given a gift during the pandemic.
