The Cattlemen’s Beef Quarters at the Iowa State Fair, one of the fair’s most popular dining spots, has announced a new menu item for the 2018 fair—Brisket Mango Tango.
Beef Quarters’ manager John Mortimer describes it as a waffle bowl partially filled with a light coleslaw, seasoned with Gramma Amber’s salad dressing. Then a generous layer of tender shredded beef brisket topped with fresh mango salsa, and a splash of dressing over the top.
