The USDA says pork production during July was a new monthly record at 1.986 billion pounds.
That’s up 6% on the year, with a 6% increase in the slaughter to 9.596 million head and the average live weight holding at 277 pounds. Pork production has notched several new monthly highs over the last few years as the U.S. herd continues to expand to record levels.
Beef totaled 2.232 billion pounds, 6% above a year ago, with a 6% rise in the slaughter to 2.766 million head canceling out a 3-pound decline in the average live weight to 1,330 pounds.
