Uncured bacon is typically thought of as being free of nitrates and nitrites. But the truth is, it does have nitrates and in some cases at higher levels than those found in cured meats.
Uncured bacon is just cured with a nitrite derived from vegetables or fruits high in nitrates- like celery or beets- that can be easily converted to a nitrite.
